We are so proud of this ‘new process’ gin. This is the first in a new line of gins where we are working with a supplying partner to create botanicals and flavours in liquid form. Originating in New Zealand, we have worked with our UK based partner to create new supplier channels to bring this drink to market as the first UK Distillery using this supply and process.
This gin is legally defined in the second of the three gin categories. This being a Distilled gin. Unlike a London Dry gin which must be created entirely within the still, a Distilled gin is created both within and outside of the still. This means that the flavours are added to the drink by adding botanicals into the distillation process within the still and then by adding flavours to the extracted distillate. This might be adding sweeteners, or other flavours. The main issue with adding flavours inside the still is maintaining consistency of taste and quality due to the variance in the agricultural and natural products being used. Products like fruit are particularly difficult to work with. Here at Pigs Bay we wanted to find a solution and we have. Our supplier is producing liquid botanical flavours which are of the highest consistency and quality.
So our Essex Pink, is a Distilled gin. We created a base London Dry gin within the Pigs Bay Distillery using natural juniper, proofed with the purest Essex water, which is then flavoured with elegant extract of dark berries to create a soft and delicate pink gin with a dry juniper note.
Of course our Essex Pink, like all Pigs Bay spirits are painstakingly gravity filtered using charcoal and then coconut to give the spirit a malt-like smoothness.
